But I found it!
You need to edit ~/.kde/share/config/kopeterc
Under the [RichTextEditor] header you'll see BgColor= and FgColor=! Just fill those in!
I hope they include an option to change those in kopete for kde4, I don't want to bust out vim just to change that color...
